Fettuccini Alfredo for 2

This is is an easy dish to prepare at home or at the table.  Very, very rich but possibly the best Fettuccini sauce you will ever eat.  Why's that?  Because it's only cheese, garlic, butter and 32% cream.  Just like they serve in the restaurants.  .

 

4 cups Pre-cooked pasta
1 cup sliced Italian ham (Optional)
2 cups 32% cream
1 or more cups of Powdered Parmesan cheese (depends on how thick you like it...)
4 tablespoons Butter
1 teaspoon or more crushed Garlic
2 tablespoons finely diced onions
4 tablespoons or more chopped parsley (optional garnish)
Black pepper

Add butter, garlic, pepper, onions to cool pan and let warm.  Once onions and garlic start to cook; ham and cook for 2 minutes.  Add 1/2 cream and 1/2 cheese.  Let simmer for about 2 minutes on med. high heat.  Add pasta, balance of cream and most of cheese (leave a bit for a garnish) and heat until boils. Let boil for about 2 minutes; let stand for about 1 minute.  The cheese melts into the cream and you have a very, very nice, very, very rich Alfredo cream sauce.  Garnish with chopped parsley and serve with garlic toast and a green or Caesar salad.

Quick and easy Garlic toast  

You already have butter, garlic, parmesan cheese and parsley left over from the recipe above.
Make sure your oven is set to "broil"; or high heat on the top elements.  Take 4 tablespoons of butter, 1/2 teaspoon of diced garlic a pinch of parsley and heat in the microwave for 45 seconds, or until liquid.  Spread over any type of white bread (baguette is best of course..it does not absorb the oil quickly; you want to spread the garlic butter and heat immediately before it gets too soggy) and heat on "broil" on the top rack of your oven until golden brown; Sprinkle with parmesan cheese and serve immediately.
