Quick Microwave or stovetop cheese sauce
Hearty Macaroni and Cheese casserole

This is a handy recipe to use up your small scraps of cheese accumulated over the week or for trays of hearty Macaroni and Cheese casseroles.

Kids love macaroni and cheese and this sauce includes real cheese; making it a good source of protein in addition to the carbohydrates from the pasta.  Suggest serving some fresh fruit or rough-cut vegetables to produce a quick; balanced meal.

This sauce can be prepared in the microwave or on the stovetop; if you are making it on the stovetop simply replace heating for 1 minute and repeat to mix in sauce pot stirring constantly.

  • In as separate bowl mix 1 tablespoon cornstarch and 1/2 cup water, until dissolved.

  • Add 1/2 cup cheese; marble or cheddar in cubes or grated

  • Add 1 cup milk

  • Heat in microwave for 1 minute on high power in the microwave then mix.  Repeat until cheese is melted in the milk and mixture is smooth. 

  • Add cornstarch mixture and mix completely.  Heat for 1 minute on high power, remove from microwave and mix constantly for 1 minute.  

  • Pour over pasta and serve immediately or mix with pasta and place in an oven-ready pan to be heated immediately or frozen and heated/served later.  

  • Optional ingredients include:  Chunks of ham or vegetables; add a topping of breadcrumbs and parsley and parmesan cheese; or simply cover in mozzarella cheese.  

  • Freeze and save for later heating from frozen for 30-35 min at 350 or warm in oven for 15 min and brown cheese or breadcrumb topping.  Do not overcook since you are warming ingredients only, not cooking them.
