| Cookie dough is easy to prepare in
advance and then freeze. I suggest that you PREPARE MORE THAN 1 RECIPE AT THE SAME TIME, Portion and freeze, separated by wax paper in hamburger-style patties. When a quick dessert is needed you take out a bit of dough and heat the oven to 350, within 12 minutes you have fresh-baked cookies. |

Using an electric hand mixer makes this task easier since it's a lot of material to prepare and you want to move quickly. As long as you don't tamper with the key ingredients these recipes of course can be modified to suit your tastes; add butterscotch chips or nuts, whatever. Cookies are easy to prepare, melt the shortening in the microwave, add sugar, eggs and then add the dry ingredients; then fold in with a spoon any other ingredients like chocolate chips. |

Peanut Butter (chocolate chip)
1 cup unsalted butter
or shortening
1 cup peanut butter - suggest
"basic; no-name" variety; not
as much sugar; otherwise I find it's too
sweet. Smooth, high-end peanut
butter includes alot of salt and icing
sugar which can affect the recipe.
1 cup granulated sugar
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon of salt
1 cup rolled oats
375 for 10 minutes from frozen. Once you see it a bit brown on the bottom, remove. Do not overcook, otherwise will be dry soon after. Roll batter into 1" balls and place 2 inches apart on a lightly grease baking sheet.
Tasty Oatmeal Cookies (add raisins, coconut, granola, nuts)
Use this recipe to make healthy "granola bar" style cookies. Very hearty.
1/2 cup shortening
1 1/4 cups sugar
1/2 cup molasses
2 eggs
1 3/4 cups flour
1 tsp salt
1 tsp soda
1 tsp cinnamon
2 cups oats
1 1/2 cups raisins and or chocolate chips,
nuts, trail mix, etc....
1/2 cup coconut (optional) but adds something nice to the batter
Mix shortening, sugar, molasses in one bowl, dry ingredients in another. Mix together then stir in oats. Once mixed, fold in raisins with a spoon.
Bake at 375 degrees for 8 to 10 minutes.

Chocolate Chip Cookies
Double Chocolate Cookies
This recipe makes a large batch of very tasty cookies.
To make really rich add more
chocolate or chocolate chips.
1 1/4 cup shortening
1 1/2 cup white sugar
1 3/4 cup brown sugar
3 eggs
2 teaspoons vanilla extract
5/8 cups powdered chocolate
4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup milk
1-2 cups chocolate chips to taste
Mix all ingredients and bake at 375 for 8-10 minutes
Gingerbread Cookies
1/4 cup butter or
shortening
1 cup brown sugar
1/4 cup molasses (yes, you do require
this to make them taste right...)
1 egg
------------
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
Cream egg,
shortening, molasses and egg.
Add dry ingredients, mix well
Use cookie cutters to form into men,
roll flat for panels for your house or
simple balls for cookies.
Sprinkle with granulated white sugar for
a nice effect.
Bake at 350 for 15 minutes.
Let the cookies cool completely before
icing.

| Rice
Krispie Squares are surprisingly good for you and contain alot of fibre. Have a glass of milk with a 4 inch square and you have a reasonably nutritional breakfast. Slip in some dried fruit and you have a healthy snack your kids might actually eat and costs pennies a serving. |

Choose 2 large cookie sheets or serving plates. Cover trays with wax paper. Cut 2 additional pieces of wax paper for use later. In your largest bowl place the butter or shortening and heat for 1 minute on high. Add marshmallows, mix to coat with oil. Heat in microwave for another 90 seconds and mix well. The mixture will have expanded, when you stir it you get a white, soupy foam. Quickly add the cereal and mix VIGOROUSLY (You only have about a minute before it starts to harden a bit...). Empty mixture onto wax paper and use another sheet of wax paper to press flat. Wait until cool, remove wax paper, cut into squares or bars and serve. |

A few things to keep in mind when preparing this recipe: * Everything happens very fast. You want to have the marshmallows and shortening in one bowl and the dry ingredients pre-mixed in another bowl with 2 platters set up with wax paper. Once the hot marshmallow paste comes out of the microwave you have to be ready to quickly mix the ingredients together and form your patty. The marshmallow does not stay soft forever and you don't want to be fumbling around. * Don't use colored marshmallows. They contain coloring and don't dissolve well. Standard "campfire style" marshmallows are ideal, one large bag is enough for 2 "loads" of cookies. Don't use pre-made marshmallow syrup, it's pretty disgusting. * Easy Now... When finishing the cookies don't press the wax paper down TOO hard when forming the patty. The bars tend to get too chewy and tough if you press down too hard, trying to "compress" as much food into each bar as possible. It's nicer to see the rice krispies themselves, and the bar is not as chewy and tough the next day. * Kids don't like cinnamon so if you intending to adding apples and Oats, skip the cinnamon. * Snacks for tomorrow This recipe is efficient since it leaves you with 2 packages of covered desserts. It's now easy to put in the refrigerator and serve the next day. If you are serving it from the fridge try and let it thaw a bit before serving. |
