Creamy Carrot Coleslaw 

Prepare in advance and add a tablespoon of mayonnaise and some raisins before serving.2 large carrots
2 tablespoons oil
1 tablespoon vinegar
1/2 teaspoon salt

Per serving:
2 tablespoons raisins
1 tablespoon mayonnaise

Peel and grate carrots.  Add oil, vinegar and salt and mix well.  Place in refrigerator, well covered until ready to serve.
When ready to serve add mayonnaise and raisins, mix well.
