Potatoes Au Gratin - Makes 2 trays 8 potatoes ----------- 8 cups milk 1/2 cup butter 1 teaspoon salt dash pepper 2 tablespoons corn starch -----------  1/4 tablespoon salt Dash pepper 1 cup cheddar cheese for filling (optional) 1 onion sliced in rings (optional) 1 cup chunk ham or bacon (optional) 1 cup mozzarella cheese for topping 2 cups breadcrumbs for topping (optional) 2 tablespoons parsley for topping (optional) Peel, slice and boil the potatoes in salted water for about 8 minutes.  In a separate sauce pot or in the microwave make the sauce: Heat milk and butter on medium heat (in the microwave heat on high for 1 minute at a time, stirring every minute..) until boiling, stirring constantly. In a separate bowl add 1/4 cup water and cornstarch; mix well and add to sauce.  Mix constantly while boiling for 1 minute; remove from heat and continue stirring for 1 minute. Remove potatoes from stove and run under cool water to chill. Drain well and pour into a roasting pan.   Add a dash of salt and pepper. Mix in white sauce Fold in any optional ingredients like cheese, onions, ham or parsley. For au gratin (breadcrumb) add breadcrumbs and parsley, drizzle with oil or butter. For Cheese topping cover completely with mozzarella cheese and garnish with parsley If fresh heat at 350 for 30 minutes.
